Pav bhaji Recipe with a twist

Pav bhaji is an all-time favorite dish with everyone. My kids love it and I try to make few changes to make it completely healthy. Just a small twist and I hope you like it.
Ingredients
  • 2 large Onions
  • 3 big sized tomatoes
  • 1 medium-sized Capsicum/bell pepper
  • ½ cup peas
  • 1 tsp ginger garlic paste
  • 2 medium carrots
  • 100 gms Cauliflower
  • Few beans
  • 1 tsp pav bhaji masala
  • 1 cup boiled yellow moong dal
  • 20 gm butter
  • 8 – Pav or dinner rolls
  • Salt to taste
Instructions
  1. First of all, boil all the vegetables and mash them nicely.
  2. Boil moong dal, mash it nicely and keep aside.
  3. Chop onions nicely in a chopper. Fry them until golden brown. Add ginger garlic paste and tomato puree.
  4. Now add some water and cook it for some time. Add salt and pav bhaji masala. Cook for 5- 10 minutes.
  5. Add the vegetable mixture and moong dal into above mixture.
  6. Mix it nicely. Add some water if thick.
  7. Let it simmer for some time.
  8. Sprinkle some chopped coriander and serve hot with buttered and cooked pavs.
Notes
Bhaji (Vegetable mixture) is a very healthy combination of vegetables but white bread pav is one thing which can be replaced with whole wheat pav. If you are cooking it for kids, you can retain the potato as it’s healthy for them.
