Gluten-free rice and spinach balls

Gluten-free spinach rice balls are a healthy snack for those who are looking for vegan and gluten-free snack options.
Ingredients
  • 1 cup finely chopped spinach
  • 1 small potato grated
  • 2-3 finely chopped green chilly
  • ½ tsp chilly powder
  • ¼ tsp hing or asafoetida
  • 1 cup rice flour or 11/2 cup boiled leftover rice
  • 4 tsp besan or chickpea flour
  • Salt to taste
  • Oil for deep-frying
Instructions
  1. Combine all the ingredients, spinach, besan (chickpea flour), rice flour/boiled rice, red chili powder, salt, and asafoetida, potato, green chilly in a bowl. Mix it well.
  2. No need to add any water as spinach and potato has its own water.
  3. Divide the mixture into equal parts and roll them to make balls.
  4. Heat oil in a frying pan and test it before frying. The oil should not be too hot as the balls will not be crispy. Also, if it’s not hot enough, the balls will be oily.
  5. Place the balls in the oil and fry until golden brown.
  6. Fry them in small batches and it will take 5 minutes per batch. Repeat this process for the remaining balls.
  7. The crispy, delicious spinach balls are ready to serve.
  8. Serve with mint chutney and tomato ketchup.
Notes
If you have leftover rice at home, you can use that instead of rice flour.

You can increase or decrease the quantity of spinach depending on your taste and like.

These are great as evening snacks or you can even give in kids snack box.
