Mango Brown rice salad

Mango brown rice salad is a full meal in itself but you can just have it as a salad too.
Ingredients
  • 1½ cups brown rice
  • 1½ cups brown rice
  • 1 spoon lemon juice

  • 1 mango, peeled and diced

  • 1green cucumber, peeled and diced

  • few chunks of pineapple

  • Salt according to taste
Instructions
  1. Boil water in a saucepan.
  2. Add salt to the water and then add the rice.
  3. Cook for about 15 minutes. Drain and rinse under cold water until grains have cooled. Shake off excess water.
  4. In the meantime, whisk the lime juice, olive oil, 1 tsp of salt, and pepper to taste in a large bowl.
  5. Add the rice mixture, mango, cucumber, onions, and pineapple and toss to combine.
  6. Season with additional salt if necessary.
