After my graduation, I was sure that I wanted to choose Foods and Nutrition as my branch for post-graduation. I am M.sc M.Phil. in Foods and Nutrition and after the certification in Food Management from the US, I work as a freelance dietician.

It’s been one year since I started my own blog and wanted to include something related to nutrition to help moms. Moms are always worried about their kid’s nutrition. A child who is a picky eater is difficult to manage and moms try everything to make them eat.

Today on my blog, I am starting a series called ‘Nutrition niche’ where I will be posting a recipe for kids and also give some nutrition tips.

I am starting with a dessert as it’s my first post in this series. Also, wanted to post something with mangoes as its mango season. Kids love mangoes and they love sweets too. It’s difficult to say no to kids for ice-creams in summers. So, why not give a healthy twist to a simple ice-cream and make a yummy dessert.

I named this recipe- MANGO MANIA and I am sure kids are going to love it.

First of all, some nutrition tips from Dietician mom about mangoes and fruits in general-

  • Mangoes are a rich source of Vitamin A, Vitamin C, potassium, antioxidants, and fiber etc. I wrote about mangoes a few days ago here. One thing to make sure is to not allow over eating of mangoes. It can lead to high blood sugar causing diabetes, diarrhea, skin problems like dermatitis etc.
  • Fruits are a very good source of fiber. It is very good if your child loves fruits. The trick is to give variety. There are red, yellow, orange and green fruits. Try giving a different color fruit daily if possible. Dr. Amrita recently wrote an informative EBook on Fruits. It is available on Amazon.
  • Dry fruits are healthy, nutritious and easy to carry anywhere. Cashews, almonds, raisins, walnut, etc. are all rich in antioxidants, essential fatty acids, and minerals. Dry fruits can also be given in snack box if your child is not interested in eating fruits any day.

This recipe is very simple and easy to make.As its summers and kids ask for ice creams a lot, it is something which can make them eat fruits too. I used only mangoes but to make it healthier, use dry fruits like cashew nuts, and raisins for toppings. You can also use fruits like pomegranate, apple, and banana with mangoes.
Ingredients
  • Mango- 1 small (Peeled and diced)
  • Mango ice cream - 2 scoops
  • Fresh cream- 2 tbsp
  • Dry fruits- few
  • Fruits like banana, apple, and pomegranate etc. - Optional
Instructions
  1. Beat the fresh cream with a hand mixer and add some powdered sugar to make it sweet.
  2. Peel and cut the mango into small pieces.
  3. Take a small serving glass.
  4. Place one scoop mango ice cream on the bottom.
  5. Next place few mango pieces on the top of the ice cream.
  6. Pour 2 spoons fresh cream on the top.
  7. Lastly, add one more scoop of ice cream and garnish it with dry fruits.
  8. You have to make layers and it is not only yummy but looks pretty and colorful.
Notes
If you are wondering, why I started with a dessert or something which has high-calorie ingredients such as ice cream and cream, let me explain.
Its summers and mango season, I wanted to share a simple recipe which can help moms as this can actually make kids eat fruits too. Nutrition Niche is not only about nutritious recipes but also simple and easy. 🙂

(Healthy ingredients include- Fruits, dry fruits, and cream) If you worry about calories for older kids, use fat-free kids but cream is not bad for kids and the best part is, it only has 2 spoons of cream in one serving.

Mango

Beat the cream only for few seconds and keep it thick. Do not make it too thin as It should look like layers of yellow and white.

Mango

Try it for your kids and let me know if they liked it or not. Waiting to hear from you and we will be back every Wednesday with a healthy and easy recipe for kids.
