These are easy to make and simple dish. This one is specific to fasting but you can change it by adding onions or tomatoes too.
Ingredients
  • 3-4 boiled Potatoes (Aloo)
  • 1 cup curd
  • ⅓ teaspoon Asafoetida (heeng)
  • 1 teaspoon Cumin seeds (Jeera)
  • ½ teaspoon ginger, finely chopped
  • 2 green chillies, chopped
  • 1 teaspoon Red Chilli powder
  • 1-1/2 teaspoon Coriander Powder (Dhania)
  • ½ Turmeric powder (Haldi)
  • Salt according to taste
  • ½ tsp powdered saunf
  • Oil to cook (according to your like)
Instructions
  1. First, boil the potatoes, chop them and keep them aside.
  2. Now, take a wok or pan, heat oil and add cumin seeds and heeng. As soon as cumin begins to crackle, add finely chopped ginger and green chillies and cook them all together for a few minutes.
  3. Add the red chilli powder, coriander powder and turmeric and cook it. Add a few drops of water so that it doesn’t stick to the pan.
  4. Now add the potatoes to the masala and mix again till the potatoes coated nicely.
  5. The next step is to add the beaten curd over the potatoes. Mix well and cook it after covering for a few minutes. Add powdered saunf.
  6. Once done, turn the heat off, garnish with coriander leaves and serve with vrat waali poori.
Notes
Notes – You can also add besan to curd. It gives it a different taste.
When not cooking for fast, you can add chopped onions in the first step.
