Pineapple and pomegranate parfait is a yummy and healthy breakfast option. Tastes best when chilled. It takes 10 minutes in the morning + overnight soaking time to make.
Ingredients
  • ½ cup oats
  • 2 tbsp chia seeds
  • 1 cup milk
  • Optional: 1-2 teaspoons of natural sweetener like honey
  • ¼ cup fresh pomegranate
  • ¼ cup fresh pineapple
  • 2tbsp granola
Instructions
  1. Soak oats and chia seeds with milk overnight in a bowl, jar or any airtight container. You can add honey at this stage if you want.
  2. Seal the container properly and leave it in the refrigerator overnight.
  3. In the morning, layer it with pomegranate seeds and pineapple slices.
  4. Lastly, add granola on the top and enjoy.
Notes
Adding honey or any other sugars is optional but you can skip it as fruits are already sweet.
If you are trying it for the first time and getting used to the taste, you can add sugar or honey.
You can also use non-fat, plain or flavored yogurt in this parfait in place of oats and chia seeds.
I use many different fruits in parfaits like apples, oranges, and banana. The best part is that you can go creative with and include or exclude anything according to your liking.

For a parfait with yogurt, take a tall glass, add yogurt at the bottom, add granola and fruits in layers and repeat.
