Gluten is a protein found in some grains like wheat, rye, barley etc. It is responsible for the elasticity and gives that chewiness to your rotis and you can see it in all the baked goods made out of wheat products too. Not all grains have gluten in them. Rice, millet, quinoa, buckwheat are all gluten-free.

Who should avoid it?

Celiac disease is a condition in which a person is either gluten sensitive or gluten resistant. Their body produces abnormal immune response while breaking down gluten during digestion. These people can avoid wheat products and can opt for products which are gluten-free.

These days’ people who are not allergic to gluten are also avoiding it. Reason?

Reasons can be different for different people. Many started following a gluten-free diet to lose weight. It aids to weight loss as you are avoiding all the starchy foods and opting for healthier versions of quinoa, brown rice etc.

Today we are making a recipe which is gluten-free and healthy as it is made with all the healthy ingredients. We are calling this recipe gluten free as it has two kinds of flours which are gluten-free. Rice flour is made up of rice which has no gluten in it and besan is made up of chickpea flour or chana dal which is a lentil or pulses. Pulses are gluten-free and rich in proteins.


Gluten-free spinach pakoras, fritters or balls, whatever you call them have rice flour and besan in them as the main ingredient along with spinach.

Gluten-free rice and spinach balls

Gluten-free spinach rice balls are a healthy snack for those who are looking for vegan and gluten-free snack options.
Ingredients
  • 1 cup finely chopped spinach
  • 1 small potato grated
  • 2-3 finely chopped green chilly
  • ½ tsp chilly powder
  • ¼ tsp hing or asafoetida
  • 1 cup rice flour or 11/2 cup boiled leftover rice
  • 4 tsp besan or chickpea flour
  • Salt to taste
  • Oil for deep-frying
Instructions
  1. Combine all the ingredients, spinach, besan (chickpea flour), rice flour/boiled rice, red chili powder, salt, and asafoetida, potato, green chilly in a bowl. Mix it well.
  2. No need to add any water as spinach and potato has its own water.
  3. Divide the mixture into equal parts and roll them to make balls.
  4. Heat oil in a frying pan and test it before frying. The oil should not be too hot as the balls will not be crispy. Also, if it’s not hot enough, the balls will be oily.
  5. Place the balls in the oil and fry until golden brown.
  6. Fry them in small batches and it will take 5 minutes per batch. Repeat this process for the remaining balls.
  7. The crispy, delicious spinach balls are ready to serve.
  8. Serve with mint chutney and tomato ketchup.
Notes
If you have leftover rice at home, you can use that instead of rice flour.

You can increase or decrease the quantity of spinach depending on your taste and like.

These are great as evening snacks or you can even give in kids snack box.
