The family that eats together, stays together.

Mornings are always crazy at our house as it’s a running race. It’s all about making breakfast, packing snack and lunch boxes, and getting kids ready for school. Lunchtime is little relaxed but most of the times its not together. Kids eat at school and we eat at home or office. We make it a point to at least have one meal of the day together and it’s mostly dinner.

Sometimes, kids want a change from regular food and I look out for ideas for a meal that is both healthy and easy to make. My go-to recipe, in this case, is pasta. Pasta is healthy nutritionally and quick and easy to make.

The best part is that this is one of those dishes which we all love. I make different varieties of pasta but my kids and husband’s favourite is red sauce pasta. Coming to the recipe of red sauce pasta with spinach, it is similar to normal red sauce pasta with one healthy twist. Most of the recipes which I shared till now had a healthy twist to it. The healthy twist is our magic ingredient spinach. Spinach is rich in iron, fiber, antioxidants, vitamin A, C and K. It is low in calories. It’s recommended to cook it before eating as raw spinach has oxalic acid which interferes with the absorption of the nutrients.


Red sauce pasta with spinach is a yummy, healthy and easy recipe which your kids are surely going to love. I add spinach to many recipes to increase the nutrition quotient and the best part is that you can just hide it in dishes if your kids are finicky.

 

Red sauce pasta with Spinach

Red sauce pasta with spinach is a healthy pasta recipe with the goodness of spinach and tomatoes. Easy to make and yummy to eat.
Ingredients
  • 250 gm penne pasta
  • 1small onion
  • 3-4 cloves garlic
  • 1 tbsp olive oil
  • 4 diced tomatoes
  • 2 tomatoes (paste)
  • 1 tsp tomato ketchup/chilli tomato sauce
  • ¼cup grated cheese
  • 200 gm fresh spinach
  • Chilli flakes (optional)
  • ½tsp dried oregano
  • Salt to taste
Instructions
  1. Boil pasta in 4-5 cups of water and when done, drain it in cold water and keep aside.
  2. While pasta is cooking, chop the onions, tomatoes and mince the garlic.
  3. Take a pan and cook onion and garlic over medium heat until softened and transparent.
  4. Add the chopped tomatoes, tomato puree, and tomato sauce. Add little water. Cook it for 5-10 minutes.
  5. Now add oregano, red chili flakes, salt, to the pan with the onions and garlic. Mix it properly.
  6. Add the fresh and chopped spinach and gently mix it into the sauce until its cooked.
  7. Add the pasta and stir until it is well coated in the sauce. Top it up with grated cheese.
  8. Serve hot with garlic bread.
Notes
You can add cheese to the sauce to make creamy tomato sauce.
You can add other vegetables like corns, zucchini, and mushrooms etc.
Instead of using fresh tomatoes, you can use homemade pasta tomato sauce or even get from outside.
