I am a big fan of rice. Being a Punjabi, I can have rajma rice at any time. I have to include a rice recipe in this series. On my search for rice recipes, I came to know of a yummy rice recipe called Arroz Amarillo which is a special food of Latin culture. It is a popular rice dish in many Latino countries but I had it the first time at a Spanish friend’s home when we were staying in the US.

It looks like our saffron rice or lemon rice. For these yellow rice also, turmeric or saffron is used to give it a yellow colour. White rice is not looked at as a very healthy option these days. Although it is rich in B vitamins and iron, the fiber content is missing. That is one reason many people are shifting to brown rice. In brown rice, the germ or bran, the outer layer is retained which makes it a good source of antioxidants, fiber, and Vitamin E. I believe white rice is also not bad if eaten in moderation. I avoid eating it at night. It’s better to maintain a balance and eat sensibly. Anything in moderation is not bad.

It is a quintessential side rice dish in Latin homes. My recipe is a vegetarian twist to normal Spanish yellow rice. They use chicken broth as one of the main ingredients but I am using vegetable broth with some vegetables in it.


On my research about yellow rice, I found out that there is Indonesian yellow rice which is a special part of their celebrations and cooked on special occasions. In South Africa, it is cooked with sugar, raisins, and cinnamon. It’s amazing how rice is a big part of celebrations in different cultures all around the world.

 

Yellow rice (Arroz Amarillo)

Yellow rice is a very popular and a must rice dish in Latin culture. It is quick and easy. You can serve these along with any Mexican dish like tacos or in burritos or just enjoy just like that.
Ingredients
  • 1 cup white rice soaked
  • 2- Bay leaves
  • 2tsp oil
  • 1 small onion
  • 3-4 garlic cloves
  • 2 cups chicken/vegetable broth
  • ½ tsp turmeric or saffron
  • 50 gm peas, carrots and any other vegetable you want to add.
Instructions
  1. First of all, take a pan and add oil. Add bay leaf and sliced onions and fry it in oil.
  2. Add minced garlic to it and cook till done.
  3. Now add the boiled vegetables which you want to add. Mix it nicely.
  4. Now add chicken or vegetable broth, turmeric, salt and bring it to boil.
  5. Once it starts boiling, add soaked rice.
  6. Cover the pan and let the rice cook completely in the broth.
  7. Serve it hot with a gravy or dry chicken or vegetable salad on the side.
Notes
You can make it with chicken broth or vegetable broth according to your choice.
Use long grain rice as it tastes better. You can include vegetable according to your liking.
The authentic Spanish rice has tomatoes and green bell peppers added along with onions which can be added while adding broth.
This is my own version of Aaroz Amarillo but the basic concept is same.
